Processing: The process starts with a 24-hour fermentation in cherry, which allows the extraction of the coffee’s own microorganisms and those from its ecosystem. The coffee is then pulped and fermented for 48 hours with the addition of brewing yeast, locking in Nativo’s characteristic spicy and fruity notes. The process ends with controlled drying in the honey method, preserving the complexity and elegance of the coffee.
